Olives

Olives were once stored in large clay jars in the palaces of Knossos, and they are still an indispensable product of Greek cuisine throughout Greece. Edible table olives, whether black or green, crushed (tsakistes), slit, in brine or vinegar, are one of the oldest and more precious gifts that Greek nature has to offer. Greeks appreciate olives not only as an appetiser but mainly as an easily digested, tasty and nutritious food.
